Once there was only one place I used to call “home”… Now there are two, the second being Ireland. If I count another place – Malta – where I lived for over 2 years, Ireland would be the third one 🙂 So far 🙂

As pumpkin, squash, sweet potatoes have been present in almost every dish I made lately, a tomato soup is in order for today. I don’t fancy classic today, and I also want to bring closer a piece of summer, so I am using some roasted bell peppers I have in my freezer. The sweetness in the peppers will balance the acidity of the tomatoes and I am not going to use any sugar to do that. A rich, delicious and impressive fish soup!
Ingredients: 6 whole cleaned sardines, 2 red onions, 3 celery stalks, finely chopped, 4 garlic cloves, finely chopped, 1/2 red chilli, finely chopped, 1/3 cup rice, olive oil, small glass of white wine, 3–4 fresh tomatoes, chopped, 1 bunch thyme, 2 pounds mixed white fish fillets (such as cod or halibut), skin off, 4 king prawns, 12–16 mussels, 1 tablespoon chopped fresh parsley leaves. 2 tablespoons olive oil, 1 cup finely chopped onion, 1/2 cup finely chopped carrot, 2 teaspoons salt, 2 cans cooked lentils, 1 cup peeled and chopped tomatoes, 2 cups water, chilli flakes, 1/2 cup lemon juice, turmeric, mint, cheddar cheese or parmesan cheese.
Place the olive oil into a pan and set over medium heat. Once hot, add the onion, carrot, and salt and cook them approximately 3 minutes. Add the lentils, tomatoes, water, chilli flakes, turmeric and stir to combine. Increase the heat to high and bring just to a boil. [Read more…]
