75 grams Wholemeal Plain Flour, 75 grams Muesli, 1.50 tsp Baking Powder, 1 medium egg, 150 ml milk, 2 tbsp honey.
Pre-heat the oven to 190°C. Line the muffin tin with muffin papers, or grease and flour each hole individually. Mix together the flour, muesli and baking powder in a bowl. In a separate bowl mix together the egg, milk and honey. Add this to the dry ingredients and fold gently until just blended together. Spoon into the muffin papers, about two-thirds full. Bake for 20 – 25 minutes until golden in colour. Cool on a wire rack. The muffins will keep a couple of days in an air tight container.
