I think I just got myself into a new addiction. But it wasn’t unexpected as I’m already addicted to chocolate. Lately it’s Snickers! The limited edition one. Imagine me buying a lot (and eating) because of their smart marketing a***s with the limited edition stuff.
Anyway the idea is that I stored up the house with Snickers. Except the savory dishes where I don’t use it, I kinda use Snickers in everything. That’s how I came up with this decadent gooey chocolaty delicious brownie with Snickers, coffee and walnuts. Now how delicious does that sound?
When I thought about the recipe I knew there was no way for my recipe to fail, but this was a twist worth trying. I mean honestly what can go wrong here? Ton of chocolate, topped with chocolate and over everything, more delicious chocolate? Yeah right, I didn’t see that coming… 🙂
It was so good that I found myself in the position to hide it all and tell everyone I burned it. That good! Well after a while I gave everyone a piece.
At some point my husband asked me what I think it’s my strong point in cookery. Am I a baker or do I like to cook more savory dishes? Am I more into presenting the food and decorating? Well the last part, no way. I barely know how to decorate a cake. It was never my thing. When forced, I ”wasted” time decorating. So my answer was that I don’t really know. I mean I didn’t know since this recipe. I am into baking brownies!
This recipe is also very easy to make. I thought I should even show my daughter how to make it. She loves brownies and I am certain that when she goes to college she will buy everything, but maybe showing her how easy is this one maybe she will be tempted to try it. Genius, right? 😉
When cooking with chocolate try this trick by adding some instant coffee too. I saw this on Barefoot Contesa a few years ago and I am using it since then. It’s definitely a twist that will get noticed! And a pinch of salt. Always.
So what you need for this fudgy decadent mocha brownie:
400g (14oz) good quality dark chocolate, 100g (3.5oz) milk chocolate, 150g (5.2oz) butter, melted, 200g (7oz) sugar, 2tsp vanilla extract, 2tsp instant coffee, 150g (5oz) walnuts, roughly chopped, 25g (1oz) cocoa powder, 75g (3oz) flour, 4 large eggs, beaten, 2tsp baking powder, 3 Snickers bars cut into thick pieces, a pinch of salt.
Finely chop chocolate and place it with the coffee in a heatproof bowl that fits in a saucepan half-filled with water and bring to a simmer. Make sure it doesn’t touch water (or it will overheat). Stir in until melted. Then set aside to cool.
Sift the dry ingredients: flour, cocoa powder, baking powder and salt.
Mix the eggs with sugar. Add the vanilla extract, melted butter and the cooled chocolate. Mix in the dry ingredients and the walnuts.
Turn the mixture into a greased and base lined baking tin and level with the back of a spoon. Top with the Snickers pieces and bake at 170°C (325°F) for about 45 minutes or until set to the centre on the surface but still soft underneath.
No need to hide this absolutely fudgy smooth and divine brownie under cream or ice cream. It’s just perfect as it is! On a scale from 1 to 10 I will rate this 100!
