Tortellini squash soup
Ingredients:
1 medium buttercup squash (2 1/2 to 3 pounds), half lengthwise, 2 packages fresh tortellini with three cheeses, 2 cups low-sodium chicken broth, 2 cups water, 1/4 teaspoon ground black pepper.

Roast lamb with mint sauce
Ingredients:

5 sprigs of mint, stems removed and discarded, 1 small shallot, 1 small clove garlic, 2 Tbs cider vinegar, 2 Tbs olive oil, 1/2 tsp salt, pepper,7 ounces Greek-style yogurt, 2 tablespoons minced fresh dill.

4 1/2 lbs beef brisket, 1/4 cup salt, 16 cups water, 2 cups salt (the sea salt is better) or 3 cups sea salt (the sea salt is better), 1/2 cup sugar, 4 bay leaves, 16 peppercorns, 4 teaspoons pickling spices, 4 garlic cloves, halved.

Classic Hot Wings
Ingredients:
Oil, for frying, 24 chicken wing parts (12 wings separated into 2 pieces), One 12-ounce bottle cayenne hot pepper sauce, 1 stick butter, several dashes Worcestershire sauce, several dashes hot sauce, such as Tabasco, blue cheese dip, for serving, Celery sticks, for serving.
Preparation:

Leek and mushrooms soup
Ingredients:
2 tbsp 30 ml) butter, 3 cups (750 ml) chopped leeks (white and light green parts), 1/2 tsp (2 ml) dried thyme or marjoram, 4 cups (1 l) sliced mixed mushrooms (button, cremini, shiitake, oyster), 3 cups (750 ml) chicken or vegetable stock, 1 cup (250 ml) milk, 1 tbsp (15 ml) white or red wine vinegar, Salt, Pepper, 1 cup (250 ml) 35 % whipping cream, 1 tbsp (15 ml) finely chopped fresh chives.
Preparation:
In a pot, melt butter over medium heat; cook leeks and thyme, stirring, for about 5 min or until soft. Increase heat to medium-high; add mushrooms and cook, stirring, for about 8 min or until golden. Add stock; bring to a boil. Reduce heat and simmer for 5 min or until vegetables are soft. In blender or food processor, in batches, or with immersion blender, purée until smooth.
